This recipe comes from a friend of mine from school. The vinegar seems like a weird addition, but trust it. Also, if you double the recipe, these are really great re-heated the next day for lunch.
- 1 lb ground pork
- 2 T white vinegar
- 3 T (one small can) chopped green chilis
- 1 clove garlic, minced
- 1/4 t oregano
- 1/4 t cumin
- salt
- 8 (or more or less, your preference) flour tortillas
- 1 1/2 cups shredded monterey jack cheese
(Preheat oven to 450) Brown the meat in a pan with a little oil added. Add vinegar, chilis, garlic and spices. Cook 4-5 minutes longer blending everything. Season with salt to taste.
To assemble: spoon the filling down the center of the tortilla. Add shredded jack. Fold the ends over the filling and then fold the sides to the center to make a packet.
Place the seam side down on 9X13 greased baking pan. Spray with pam. Bake in a 450 degree oven until golden (8-10 minutes).
Serve with sour cream and salsa.
